Ever heard of Mexican barbacoa? The primitive way of making this dish is through a fire pit that’s stuffed with wood and lava rocks, which cooks the chicken barbacoa along with the caldo de consommé. It is homemade barbacoa by a Mexican family.
It is a long process that begins with burning the wood and coal, then roasting the meat in an underground oven that cooks the protein for 3 to 5 hours. The result is a barbacoa that is tender, smokey, and earthy. There is nothing quite like it in Mexican cuisine.
